Ingredients
- 8 skinless boneless chicken thighs
- 1 head of garlic, broken into cloves and peeled
- 180 ml white wine vinegar
- 120 ml soy sauce
- 4 dried bay leaves, torn up
- 1 small hot, green chile, finely chopped
- 1 tablespoon brown sugar
- 1 tablespoon olive oil
- Freshly ground black pepper
Directions
- Preheat the oven to 200°C
- Place the chicken inside a roating dish big enough to fit them all in one layer. Add all the ingredients exept the olive oil. Let sit for half and hour, turning the chicken through the sauce after 15 minutes.
- Brush the chicken with olive oil and season with black pepper.
- Roast in the oven for 15 minutes, then turn down to 170°C and cook for another 35 minutes. If you’d like, you can simmer down the sauce in a pan to make it thinner.
- Serve with mashed potatoes, rice or something else.
