Ingredients

  • 1/2 cup Mayonnaise
  • 1 tablespoon and 2 teaspoons sweet paprika
  • 500 g boChicken
  • 600g baby potatoes, thinly sliced lengthwise
  • 4 tablespoons olive oil
  • 1 Lime
  • 3 Tablespoons Chopped Parsley
  • Salt

Directions

  1. Preheat the oven 205 degrees celsius
  2. In a large mixing bowl, stir together Mayonnaise and 1 tablespoon paprika. Then take away about a third of the mixture and save in a small bowl. Toss the chicken in the bowl with the mayonnaise until coated.
  3. On a large sheet pan, spread out the potatoes evenly. Sprinkle the rest of the paprika and 3 tablespoons olive oil on top and toss to coat.
  4. Lay the chicken on top of the potatoes and put the pan in the oven. Roast until the potatoes are tender, about 35 minutes.
  5. While the chicken and potatoes are roasting, squeeze half the lime and 1 tablespoons olive oil into the reserved mayonnaise-paprika mixture. Season to taste with salt and lime juice.
  6. When the chicken-potatoes are done, take them out of the oven and sprinkle with parsley. Serve with the mayonnaise sauce and lemon slices.
