Ingredients
- 1/2 cup Mayonnaise
- 1 tablespoon and 2 teaspoons sweet paprika
- 500 g boChicken
- 600g baby potatoes, thinly sliced lengthwise
- 4 tablespoons olive oil
- 1 Lime
- 3 Tablespoons Chopped Parsley
- Salt
Directions
- Preheat the oven 205 degrees celsius
- In a large mixing bowl, stir together Mayonnaise and 1 tablespoon paprika. Then take away about a third of the mixture and save in a small bowl. Toss the chicken in the bowl with the mayonnaise until coated.
- On a large sheet pan, spread out the potatoes evenly. Sprinkle the rest of the paprika and 3 tablespoons olive oil on top and toss to coat.
- Lay the chicken on top of the potatoes and put the pan in the oven. Roast until the potatoes are tender, about 35 minutes.
- While the chicken and potatoes are roasting, squeeze half the lime and 1 tablespoons olive oil into the reserved mayonnaise-paprika mixture. Season to taste with salt and lime juice.
- When the chicken-potatoes are done, take them out of the oven and sprinkle with parsley. Serve with the mayonnaise sauce and lemon slices.
